Method

  1. Hull and halve the fresh strawberries. Chill your serving glasses in the freezer.
  2. Add frozen strawberries, fresh strawberries, white rum, fresh lime juice, and simple syrup to a high-powered blender.
  3. Blend on low speed for 10 seconds until ingredients are mostly combined.
  4. Increase to medium-high speed and blend until smooth and slushy, about 30-45 seconds.
  5. Taste and adjust sweetness with additional simple syrup or tartness with more lime juice as needed.
  6. Pour into chilled glasses and garnish with fresh strawberry and lime wheel. Serve immediately.

Method

  1. Chill a champagne flute or coupe glass by placing in freezer for 10 minutes or filling with ice water while preparing the cocktail.
  2. In a cocktail shaker, combine 45ml gold rum, 15ml Galliano, 60ml fresh pineapple juice, and 10ml fresh lime juice.
  3. Fill the shaker with ice and shake vigorously for 10-15 seconds until the mixture is well-chilled and properly diluted.
  4. Empty the chilled glass and fine strain the cocktail mixture into it, leaving about 2cm of space at the top for the sparkling wine.
  5. Gently top with 45ml Prosecco, adjusting amount to taste and glass size, then stir very gently with a bar spoon to integrate without losing carbonation.
  6. Garnish with a fresh pineapple wedge on the rim and optionally add a maraschino cherry for color and tropical presentation.

Method

  1. Fill a highball glass completely with fresh ice cubes.
  2. Pour 120ml of spicy ginger beer into the glass, leaving space at the top for the rum float.
  3. If using lime juice, add 15ml of fresh lime juice directly to the ginger beer. Add 2 dashes of aromatic bitters if using.
  4. Slowly pour 60ml of dark rum over the back of a bar spoon held just above the surface of the ginger beer, allowing it to float on top and create the signature layered "stormy" effect.
  5. Garnish with a lime wedge on the rim of the glass.
  6. Serve immediately with the rum floating for visual effect, or gently stir once before drinking to blend the flavors.

Method

  1. Fill a hurricane glass with ice cubes and set aside to chill.
  2. In a cocktail shaker, combine rum, pineapple juice, orange juice, and cream of coconut with ice cubes.
  3. Shake vigorously for 5-10 seconds until the mixture is well-chilled and slightly frothy.
  4. Strain into a chilled hurricane glass over crushed ice.
  5. Fill the glass to the top with crushed ice.
  6. Generously grate fresh nutmeg over the top of the drink and add optional orange wheel and mint sprig garnish.

Method

  2. Place 7 fresh mint leaves in the cocktail shaker and gently muddle or simply add them for shaking to release oils without over-bruising.
  3. Add 45ml aged rum, 22.5ml fresh lime juice, 30ml simple syrup, and 2 dashes of Angostura bitters to the shaker with the mint.
  4. Fill the shaker with ice and shake vigorously for 8-10 seconds until well chilled.
  5. Double strain the mixture through a fine strainer into the chilled coupe glass to remove mint bits and ice shards.
  6. Top with 60ml of well-chilled brut Champagne, pouring gently to maintain bubbles.
  7. Garnish with a fresh mint sprig, gently slapping it between your palms to release aromatics before placing in the drink.

  1. Add cane syrup to a small old fashioned glass.
  2. Cut a disc from the side of a fresh lime, including both peel and flesh, about 2-3cm across.
  3. Squeeze the lime disc over the syrup to release oils and juice, then drop into glass.
  4. Pour rhum agricole blanc over the lime and syrup.
  5. Swizzle or stir gently in the glass until sugar is dissolved and lime oils are integrated.
  6. Add ice cube if desired. Serve immediately with a small spoon for adjustment.
