  • Dark rum, aged Barbados rum60 ml
  • Falernum, spiced and sweet-tarte.g. Velvet Falernum15 ml
  • Lime, squeezed over the drink and dropped in1 wedge
  • Aromatic bitters (Angostura), to tastee.g. Angostura3 dashes
  • Lime, to garnish (optional)1 wedge

Method

  1. Fill a double old fashioned glass with ice: crushed ice chills faster in Caribbean style, while large cubes dilute more slowly.
  2. Pour the falernum and bitters straight into the glass.
  3. Add the aged rum.
  4. Squeeze a lime wedge over the drink, then drop it into the glass.
  5. Stir thoroughly until the drink is cold and well diluted.
  6. Garnish with a second lime wedge.

About this drink

Corn & Oil comes from Barbados and is often called one of the island's oldest rum drinks. The name has nothing to do with maize or cooking oil: it is thought to echo the biblical phrase for abundance, while the dark rum and falernum sitting side by side in the glass are said to look like oil floating on water. The drink is a lesson in balance: only four ingredients, and every one of them counts.
