  • Bourbon60 ml
  • Lemon juice, freshly squeezed30 ml
  • Simple syrup (1 part Sugar, 1 part Water)15 ml
  • Soda watertop up
  • Lemon, to garnish (optional)1 slice
  • Cocktail cherry, to garnish (optional)1 whole

Method

  1. Fill a Collins glass with plenty of ice.
  2. Shake the bourbon, lemon juice and simple syrup with ice in a shaker for about 10 seconds.
  3. Strain into the ice-filled glass.
  4. Top up with soda water and stir briefly and gently to keep the fizz.
  5. Garnish with a lemon slice and a cocktail cherry.

About this drink

The Collins family takes its name from John Collins, a head waiter at Limmer's Old House in nineteenth-century London. Today a 'John Collins' usually means the whiskey version, made with bourbon, while the Tom Collins keeps the gin. Plenty of soda water and a tall glass keep the bubbles lively to the last sip.
