Emerald Isle
Gin, green crème de menthe and aromatic bitters, stirred ice-cold: emerald green, minty fresh and ready in three minutes.

Ingredients
- London Dry gin60 ml
- Green crème de menthe30 ml
- Aromatic bitters (Angostura)2 dashes
- Mint, to garnish (optional)1 sprig
Method
- Chill a coupe or martini glass with iced water while you get the drink ready.
- Fill a mixing glass with ice and add the gin, green crème de menthe and aromatic bitters.
- Stir for about 20 seconds, until the drink is ice-cold and lightly diluted.
- Tip the iced water out of the glass and strain the drink into it.
- Garnish with a fresh sprig of mint, if you like.
About this drink
A classic coloured after the Emerald Isle itself: gin carries the botanicals, crème de menthe brings both the colour and a cool breath, and a couple of dashes of bitters keep the sweetness in check. It is a digestif rather than an aperitif; serve it after dinner, when the mint earns its keep.
