Gold Rush
A modern classic of bourbon, honey and freshly squeezed lemon: warm, tart and perfectly balanced.

Ingredients
- Bourbon60 ml
- Lemon juice, freshly squeezed22 ml
- Honey syrup (3 parts Honey, 1 part Water)22 ml
- Lemon, to garnish (optional)1 wheel
Method
- Fill a shaker with ice cubes.
- Pour the bourbon, honey syrup and freshly squeezed lemon juice into the shaker.
- Shake hard for 10–15 seconds, until the shaker is ice-cold.
- Strain into a rocks glass over one large ice cube.
- Garnish with a lemon wheel or a strip of lemon zest.

About this drink
The Gold Rush was born in the early 2000s at the legendary Milk & Honey speakeasy in New York, where T.J. Siegel created it as a simple variation on the Whiskey Sour. Swapping simple syrup for honey syrup gave the drink a rounder, more aromatic sweetness that plays beautifully against bourbon's caramel notes and the freshness of lemon. It is now counted among the most influential modern cocktails and has inspired countless riffs around the world.
