Jessica Rabbit
A fresh, golden-orange drink of gin, carrot juice, elderflower and fresh citrus: floral, crisp and a sight to behold.

Ingredients
- London Dry gin45 ml
- Carrot juice, freshly pressed30 ml
- Elderflower liqueur, elderflower, cordial style10 ml
- Lime juice, freshly squeezed15 ml
- Lemon juice, freshly squeezed15 ml
- Maple syrup, for rounded sweetness20 ml
Method
- Fill a highball glass with crushed ice and leave it to chill while you prepare the drink.
- Add the gin, elderflower liqueur, lime juice, lemon juice and syrup to a shaker along with the fresh carrot juice.
- Fill the shaker with ice cubes and shake hard for 15–20 seconds, until ice-cold.
- Strain into the prepared glass over fresh crushed ice.
- Garnish with thin carrot sticks and serve at once, while it is ice-cold.

About this drink
The Jessica Rabbit was created by Pierre-Marie Bisson at Basement Sate in London as a visual tribute to the carrot's natural orange glow. It builds on gin and elderflower, a classic English pairing, with sweetness from a rich syrup and acidity from fresh citrus. The drink has since had several lives, with vodka and ginger or tequila and chilli, but the original remains the most elegant version.
