  • Lillet Rosé60 ml
  • Lemon juice, freshly squeezed, to taste12 ml
  • Ice, plenty, large cubes by preferencefill the glass
  • Tonic water, a high-quality one120 ml
  • Grapefruit, to garnish (optional)1 slice
  • Thyme, to garnish (optional)1 sprig

Method

  1. Chill a large wine glass or goblet well in advance.
  2. Fill the glass generously with ice cubes.
  3. Pour the Lillet Rosé into the glass.
  4. Add the freshly squeezed lemon juice, to taste, for extra freshness.
  5. Top up gently with the tonic, so the bubbles hold.
  6. Stir briefly and gently.
  7. Garnish with a slice of grapefruit or a sprig of thyme, as you like.

About this drink

Lillet Rosé is a French aromatised wine with berry and floral notes that has become a fixture of the light aperitif scene since its launch in 2011. Pairing it with tonic is a modern reinvention of the classic white wine and tonic serve, with the tonic's bitterness and bubbles balancing the wine's sweetness. It is especially popular in summer as a lower-alcohol alternative to the stronger Gin & Tonic.
