Fresh passion fruit, cold vodka and a crisp hit of bubbles make this modern classic irresistibly sweet and tart.

  • Vodka60 ml
  • Proseccotop up
  • Lime juice, freshly squeezed15 ml
  • Passion fruit juice30 ml
  • Passion fruit, pulp and seeds, scooped out1 whole
  • Simple syrup (1 part Sugar, 1 part Water)15 ml
  • Passion fruit, halved, to garnish (optional)1 piece

Method

  1. Chill a martini glass or coupe in the freezer for at least 10 minutes.
  2. Fill a shaker halfway with ice cubes.
  3. Add the vodka, passion fruit juice, lime juice and simple syrup.
  4. Scrape the pulp and seeds of a passion fruit into the shaker.
  5. Shake hard for 15–30 seconds, until the shaker feels ice-cold.
  6. Double-strain into the chilled glass to remove seeds and pulp.
  7. Top the glass with prosecco.
  8. Garnish with half a passion fruit and serve at once.

About this drink

The Passion Fruit Martini grew out of London's 1990s vodka-martini boom as a sweeter, more approachable cousin of the classic martini. It shares its roots with the Pornstar Martini, but here the sparkling wine goes on top rather than being served on the side. Fresh passion fruit makes all the difference: use only ripe, wrinkled fruit for the best aroma.
