Passion Fruit Mojito
A fresh Mojito with sweet passion fruit, crushed mint and a touch of lime: tropical balance in every sip.

Ingredients
- White rum60 ml
- Lime juice, freshly squeezed30 ml
- Mint, fresh leaves, muddled gently12 leaves
- Passion fruit, pulp and seeds1 whole
- Brown sugar, turbinado or cane sugar1 tbsp
- Soda watertop up
- Mint, to garnish (optional)1 sprig
- Lime, to garnish (optional)1 wedge
Method
- Muddle the mint, brown sugar and lime juice in the bottom of a shaker or straight in the serving glass, taking care not to shred the mint.
- Scrape the passion fruit pulp and seeds into the glass (strain them out if you prefer a smoother drink).
- Add the rum and shake briefly with ice, or stir well if you are building in the glass.
- Fill a highball glass with ice and pour the mixture over.
- Top up with soda water and stir gently.
- Garnish with a sprig of mint and a lime wedge, and serve at once with a straw.
About this drink
