Strawberry Mojito
A fresh, sweet-tart Mojito with muddled strawberries and mint, topped with soda water.

Ingredients
- White rum60 ml
- Lime juice, freshly squeezed30 ml
- Strawberry, hulled and sliced3 whole
- Mint, fresh leaves12 leaves
- Simple syrup (1 part Sugar, 1 part Water)15 ml
- Soda watertop up
- Strawberry, to garnish (optional)1 slice
- Mint, to garnish (optional)1 sprig
- Lime, to garnish (optional)1 wheel
Method
- Put the strawberries, mint leaves and simple syrup into a tall glass.
- Muddle gently to release the strawberry juice and mint aroma, without tearing the mint apart.
- Add the lime juice and white rum and stir lightly.
- Fill the glass with crushed ice.
- Top up with soda water and stir gently to keep the bubbles.
- Garnish with a strawberry slice, a sprig of mint and a lime wheel, and serve straight away with a straw.
About this drink
The Mojito comes from Cuba and has roots in the sugar-cane fields of the 1800s, where rum, lime, mint and sugar were mixed into a refreshing drink for the tropical heat. The strawberry version is a modern addition that uses the berry's natural sweetness to balance the lime's acidity and the mint's freshness. The key to a good Strawberry Mojito is gentle muddling: pressing the mint too hard leaves a bitter aftertaste.
