Pineapple Martini

A fresh, lightly sweet vodka Martini with pineapple and lime in easy balance.

  • Vodka37.5 ml
  • Lime juice, freshly squeezed7.5 ml
  • Pineapple juice, freshly pressed, ideally cold-pressed30 ml
  • Rich simple syrup, 2:1 sugar syrup (2 parts Sugar, 1 part Water)4 ml
  • Pineapple, to garnish (optional)1 wedge

Method

  1. Fill a cocktail shaker with ice cubes.
  2. Add the vodka, pineapple juice, lime juice and rich syrup.
  3. Shake hard for 10–15 seconds, until the shaker is ice cold and frosted.
  4. Double strain into a chilled martini glass to catch ice chips and fruit pulp.
  5. Garnish with a pineapple spear and serve straight away.

About this drink

The Pineapple Martini appeared in the 1990s as a fruity offshoot of the Martini, when bartenders began working with fresh juices rather than only spirits and vermouth. It quickly became a hit in cocktail bars around the world thanks to its gentle sweetness and tropical aroma. Ben Reed's version, with rich 2:1 syrup and freshly pressed pineapple, has become a modern standard.
