  • Vodka45 ml
  • Limoncello45 ml
  • Sparkling wine, cold brut Champagne or proseccotop up
  • Lemon juice, freshly squeezed30 ml
  • Grenadine15 ml
  • Lemon, to garnish (optional)1 slice
  • Cocktail cherry, to garnish (optional)1 whole

Method

  1. Chill the glass, spirits and sparkling wine thoroughly before you start.
  2. Fill a shaker with ice cubes and add the vodka, limoncello, fresh lemon juice and grenadine.
  3. Shake hard for 10–15 seconds, until the shaker is ice cold on the outside.
  4. Strain into the chilled glass.
  5. Top up with cold sparkling wine, pouring slowly to keep the bubbles and build a neat layer.
  6. Garnish with a lemon slice and a cocktail cherry, and serve straight away.

About this drink

Pink & Bubbly belongs to the American brunch tradition, where citrus liqueur and vodka meet a glass of cold sparkling wine to make something light, sweet and photogenic. It is no century-old classic but a modern party drink made to be dressed up in a coupe or flute at baby showers and Sunday brunch. The grenadine brings the colour, the limoncello the scent of ripe lemons, and the bubbles do the rest.

Grenadine

Ingredients

  • Pomegranate juice250 ml
  • Sugar250 g
  • Pomegranate molasses1 tbsp
  • Orange flower water1 tsp
  • Citric acid1.25 g
  • Malic acid1.25 g

Method

  1. Place all the ingredients in a blender and blend until the sugar has dissolved.
  2. Pour into a sterilized bottle and store in the refrigerator; it will keep for at least 2–4 weeks, although I have kept it much longer without any issues. I rinse the bottle with a teaspoon of Atamon to extend the shelf life.
