  • Amontillado sherry, ideally Amontillado or Palo Cortado, for nutty depth90 ml
  • Orange, lightly muddled in the shaker0.5 wheels
  • Lemon, optional, for extra freshness (optional)0.5 wheels
  • Raspberry, or blackberries or strawberries, depending on the season4 whole
  • Ice, crushed, to servefill the glass
  • Simple syrup (1 part Sugar, 1 part Water)7 ml
  • Orange, to garnish (optional)1 slice
  • Mint, to garnish (optional)1 sprig

Method

  1. Put the orange and lemon pieces and the berries into a shaker with the syrup.
  2. Muddle gently to release the juice and oils from the fruit.
  3. Add the sherry and a handful of ice cubes, and shake briefly and hard for about 10 seconds.
  4. Fill a glass to the brim with crushed ice.
  5. Strain the drink over the crushed ice, letting a little fruit fall in for flavour and looks.
  6. Top with more crushed ice so it forms a mound above the rim.
  7. Garnish with an orange slice, a few fresh berries and a sprig of mint.
  8. Add a straw and serve straight away, ice cold.

About this drink

The Sherry Cobbler appeared in the United States in the 1830s and was one of the first drinks served with a straw and crushed ice, a sensation at the time that made it the most modern drink of its day. Its charm lies in light, nutty sherry with the sweetness and acidity of fruit, served cold and refreshing. It remains a perfect example of how little it takes to create balance and elegance.
