Spiced Chai Gin Sour
A creamy gin sour spiced with homemade chai syrup, fresh lemon and a silky egg-white foam.

Ingredients
- Gin60 ml
- Lemon juice, freshly squeezed25 ml
- Cinnamon syrup, homemade chai-spiced syrup with cinnamon, cardamom, cloves, star anise, ginger, black pepper and nutmeg25 ml
- Egg white30 ml
- Aromatic bitters (Angostura)1 dash
- Lemon, dried, to garnish (optional)1 wheel
Method
- Simmer water and sugar with the spices (cinnamon stick, cardamom pods, cloves, star anise, ginger, peppercorns and nutmeg) into a syrup, add chai tea and let it steep for 5 minutes, then strain and cool. This spiced syrup is the heart of the drink.
- Pour the gin, lemon juice, spiced syrup, egg white and bitters into a shaker.
- Dry shake without ice for about 10 seconds so the egg white emulsifies and foams.
- Add ice and shake again for about 15 seconds, until well chilled.
- Double strain into a chilled coupe.
- Garnish with a dried lemon wheel or a pinch of ground cinnamon.
About this drink
The Spiced Chai Gin Sour is a modern, spiced twist on the classic sour family, in which the warm aromas of cinnamon, cardamom and clove meet the botanical bite of gin. It borrows its fragrance from Indian masala chai and its structure from the gin sour. The egg white gives the silky, foaming finish that makes it such a comforting drink in the colder months.
