Vodka Sour
A tart, creamy classic with a silky egg-white foam and a hint of Angostura spice.

Ingredients
- Vodka50 ml
- Lemon juice, freshly squeezed20 ml
- Simple syrup, homemade (1 part Sugar, 1 part Water)15 ml
- Egg white20 ml
- Aromatic bitters (Angostura)e.g. Angostura3 dashes
- Lemon, to garnish (optional)1 twist
- Cocktail cherry, to garnish (optional)1 whole
Method
- Add the vodka, lemon juice, simple syrup, egg white and bitters to a shaker without ice.
- Dry shake hard for about 30 seconds so the egg white emulsifies into a silky foam.
- Add ice and shake again for 20–30 seconds, until the shaker is ice cold.
- Strain into a chilled glass.
- Twist a strip of lemon peel over the drink to release its oils and drop it into the glass with a cocktail cherry.
About this drink
The sour family goes back to 19th-century sailors, who mixed spirits with citrus and sugar, not least to keep scurvy at bay. The Vodka Sour is the neutral, modern cousin of the Whiskey Sour, with egg white giving the signature cloud of foam that makes every sip a little more luxurious. The double shake, first without ice and then with it, is the secret to the perfect velvety texture.
