  • Añejo tequila, aged, 100% agave60 ml
  • Agave syrup12 ml
  • Aromatic bitters (Angostura)e.g. Angostura3 dashes
  • Orange, to garnish, expressed for its oils (optional)1 twist

Method

  1. Chill a mixing glass and a rocks glass thoroughly.
  2. Pour the tequila, agave syrup and bitters into the mixing glass.
  3. Fill with ice and stir calmly for 25–30 seconds, until cold and lightly diluted.
  4. Strain into the rocks glass over one large ice cube.
  5. Twist the orange peel over the drink to release its oils, rub it around the rim and drop it into the glass.
  6. Serve straight away.

About this drink

The Old Fashioned is the original cocktail of 19th-century America, where whiskey, sugar and bitters were stirred over ice to show off the spirit itself. Swap the whiskey for a mature añejo tequila and you get the same deep barrel notes, with agave and a hint of warm spice underneath. Agave syrup replaces the sugar neatly because it matches the tequila's natural sweetness instead of fighting it.
