  • Tequila, silver or reposado500 ml
  • Orange liqueur, Cointreau or triple sec250 ml
  • Lime juice, freshly squeezed250 ml
  • Agave syrup90 ml
  • Salt, to balance the sweetness1 pinch
  • Lime, to garnish (optional)1 wedge
  • Salt, to rim the glasses (optional)1 pinch

Method

  1. Squeeze enough fresh limes for the juice.
  2. Pour the tequila, orange liqueur, lime juice, agave syrup and a pinch of salt into a large jug.
  3. Stir well, add a handful of ice and stir again until the mixture is cold and even.
  4. Moisten the rim of each glass with a lime wedge and dip it in margarita salt.
  5. Fill the glasses with fresh ice, pour the Margarita over, and garnish with lime wedges or wheels.

About this drink

The Margarita is thought to come from Mexico in the 1930s or 1940s, where tequila met lime juice and orange liqueur in a classic balance of acidity, sweetness and strength. As a pitcher drink it is the perfect answer when a whole crowd of guests should enjoy the same fresh flavour without the host shaking glass after glass. The key is fresh lime juice and good tequila: never bottled juice if you want the real thing.
