  • Vodka, a good-quality vodka60 ml
  • Lemon juice, freshly squeezed lemon juice22.5 ml
  • Simple syrup (1 part Sugar, 1 part Water)15 ml
  • Soda watertop up
  • Lemon, to garnish (optional)1 wheel
  • Cocktail cherry, to garnish (optional)1 whole

Method

  1. Fill a cocktail shaker with ice cubes.
  2. Pour the vodka, lemon juice and simple syrup into the shaker.
  3. Shake hard for 8–10 seconds, until the shaker is ice cold on the outside.
  4. Fill a Collins glass with fresh ice cubes and strain the drink into it.
  5. Top up with soda water and give it a light stir with a bar spoon.
  6. Garnish with a lemon slice and a cocktail cherry.

About this drink

The Collins family goes back to 19th-century London, where John Collins lent his name to a simple formula of spirit, citrus, sugar and soda. The vodka version appeared in the 20th century as vodka took off in the United States, giving the classic a cleaner, more neutral character. It is still one of the most relaxed ways to drink a highball.
