About this drink

The Ward Eight was created in Boston in 1898, according to legend at the Locke-Ober Café to celebrate politician Martin Lomasney's election win in the city's eighth ward. It is one of the early sour classics in which grenadine steps in as the sweetener instead of plain sugar syrup, giving the drink its depth and colour. Use homemade grenadine if you can: its raw, fruity pomegranate flavour makes a world of difference compared with the sweet bottled kind.

Grenadine

Ingredients

  • Pomegranate juice250 ml
  • Sugar250 g
  • Pomegranate molasses1 tbsp
  • Orange flower water1 tsp
  • Citric acid1.25 g
  • Malic acid1.25 g

Method

  1. Place all the ingredients in a blender and blend until the sugar has dissolved.
  2. Pour into a sterilized bottle and store in the refrigerator; it will keep for at least 2–4 weeks, although I have kept it much longer without any issues. I rinse the bottle with a teaspoon of Atamon to extend the shelf life.
