  • Bourbon22 ml
  • Aperol22 ml
  • Amaro Nonino22 ml
  • Lemon juice, freshly squeezed22 ml
  • Lemon, to garnish (optional)1 twist

Method

  1. Fill a shaker with plenty of ice.
  2. Add the bourbon, Aperol, Amaro Nonino and freshly squeezed lemon juice in equal parts.
  3. Shake hard for about 15 seconds, until the shaker is frosty on the outside.
  4. Double-strain through a fine-mesh strainer into a chilled coupe.
  5. Express a strip of lemon peel over the drink and drop it in to garnish.

About this drink

The Paper Plane was created by bartender Sam Ross in 2007 and takes its cue from the Last Word's equal-parts structure. The name comes from M.I.A.'s song Paper Planes, which was everyone's favourite track that year. It has since become a modern classic, loved for its simple recipe and perfect balance of bitter, sour and sweet.
