  • Bourbon45 ml
  • Aperol22.5 ml
  • Pedro Ximénez sherry15 ml
  • Lemon juice, freshly squeezed22.5 ml
  • Simple syrup (1 part Sugar, 1 part Water)15 ml
  • Lemon, to garnish (optional)1 twist

Method

  1. Fill a cocktail shaker with ice cubes.
  2. Pour the bourbon, Aperol, PX sherry, lemon juice and simple syrup into the shaker.
  3. Shake hard for 12–15 seconds, until the shaker is ice cold and frosted on the outside.
  4. Double strain into a chilled coupe or Nick & Nora glass.
  5. Express a strip of lemon peel over the drink to release its oils, then drop it in or set it aside as you prefer.

About this drink

The Royal Sovereign is a modern drink that builds on the whiskey sour family by adding Aperol's bitter citrus and the raisin-rich sweetness of Pedro Ximénez sherry. The combination gives more depth and complexity than a classic sour without losing the balance of sour, sweet and spirit.
