Pineapple Daiquiri
A fresh Daiquiri with juicy pineapple and sharp lime, rounded off with a touch of simple syrup.

Ingredients
- White rum50 ml
- Lime juice, freshly squeezed20 ml
- Pineapple juice20 ml
- Simple syrup (1 part Sugar, 1 part Water)5 ml
- Pineapple, to garnish (optional)1 wedge
Method
- Chill a Daiquiri glass in the freezer or with iced water.
- Pour the white rum, fresh lime juice, pineapple juice and simple syrup into a shaker.
- Fill the shaker halfway with ice cubes and shake hard for 10–15 seconds.
- Strain, ideally double strain, into the chilled glass.
- Garnish with a pineapple wedge and serve straight away.
About this drink
The Daiquiri came out of Cuba around the turn of the 20th century and became a fixture of American bar culture, helped not least by Hemingway's enthusiasm for it. The pineapple version is a newer, tropical variation in which the fruit's sweetness and acidity take over part of the classic lime balance without drowning the rum.
