Polar Bear
Electric blue and citrus-fresh: vodka, curaçao and lime in a fizzy, thirst-quenching long drink.

Ingredients
- Vodka60 ml
- Blue curaçao30 ml
- Lime juice, freshly squeezed15 ml
- Lemon-lime sodatop up
- Lemon, to garnish (optional)1 wheel
Method
- Fill a highball glass with plenty of ice.
- Pour the vodka and blue curaçao over the ice.
- Add the fresh lime juice for an extra hit of citrus.
- Top up with lemon-lime soda.
- Stir gently with a bar spoon to keep the fizz.
- Garnish with a lemon wheel, if you like.
About this drink
The Polar Bear is a Danish party take on the Blue Lagoon, the vodka and blue curaçao highball usually credited to Andy MacElhone at Harry's New York Bar in Paris in the 1960s. The electric blue comes from the curaçao, and the name nods to the drink's icy, Nordic look. It is made for a sunny afternoon when you want colour without giving up on flavour.
Questions and answers
What gives the Polar Bear its blue colour?
Blue curaçao, an orange liqueur coloured blue. It tastes much like an ordinary triple sec but gives the drink its signature cool colour.
What if I don't have blue curaçao?
Triple sec gives almost the same flavour, but you lose the blue colour the drink is named for. If the look doesn't matter to you, it's a fine shortcut.
