  • White rum50 ml
  • Dark rum, for extra depth and spice25 ml
  • Orange juice30 ml
  • Lime juice, freshly squeezed20 ml
  • Pineapple juice30 ml
  • Grenadine20 ml
  • Orange, to garnish (optional)1 wheel
  • Lime, to garnish (optional)1 wheel
  • Pineapple, to garnish (optional)1 wedge
  • Cocktail cherry, to garnish (optional)1 piece

Method

  1. Fill a shaker with ice cubes.
  2. Add the white rum, dark rum, orange juice, lime juice, pineapple juice and grenadine.
  3. Shake hard for 10–15 seconds, until the shaker is ice cold on the outside.
  4. Strain over fresh ice in a tall glass.
  5. Garnish with orange, lime and pineapple and a cocktail cherry.

About this drink

Rum Punch is one of the Caribbean's oldest drink traditions, built on the simple rhyme 'one of sour, two of sweet, three of strong, four of weak', which sailors and planters used to mix punch without a measure. Every island has its own version, some swearing by grenadine and others by simple syrup, but rum, citrus and fruit juice run through them all. It is a drink for sharing, ideally from a big bowl or jug on a warm evening in good company.

Grenadine

Ingredients

  • Pomegranate juice250 ml
  • Sugar250 g
  • Pomegranate molasses1 tbsp
  • Orange flower water1 tsp
  • Citric acid1.25 g
  • Malic acid1.25 g

Method

  1. Place all the ingredients in a blender and blend until the sugar has dissolved.
  2. Pour into a sterilized bottle and store in the refrigerator; it will keep for at least 2–4 weeks, although I have kept it much longer without any issues. I rinse the bottle with a teaspoon of Atamon to extend the shelf life.
