Tips & Notes

  • Always use aged rhum agricole from Martinique for the most authentic flavor profile - the grassy, vegetal character is essential to the drink's identity.

  • Make your own cinnamon syrup by simmering crushed cinnamon sticks with equal parts sugar and water for superior flavor compared to commercial versions.

  • Use fresh white grapefruit juice rather than pink - it provides cleaner citrus notes without the additional sweetness that can unbalance the cocktail.

  • Measure ingredients precisely using a jigger - the Donga Punch's balance depends on exact proportions, especially the 2:1 ratio of grapefruit juice to cinnamon syrup in Don's Mix.

  • Shake with cubed ice but serve over crushed ice for proper dilution and the classic tiki presentation that keeps the drink cold longer.

While you can substitute, rhum agricole’s unique grassy, vegetal character from fresh sugarcane juice is essential to the authentic Donga Punch flavor. Regular molasses-based rum will create a different, less complex cocktail.

Don’s Mix is the signature combination of grapefruit juice and cinnamon syrup in a 2:1 ratio, created by Don the Beachcomber. This mixture provides the drink’s distinctive sweet-spicy-citrus profile that balances the rhum agricole perfectly.

Properly stored in the refrigerator, homemade cinnamon syrup will keep for up to one month. Store in a clean, airtight container and always use clean utensils when dispensing to maximize shelf life.

Traditionally, the Donga Punch is served without garnish, focusing purely on the balanced flavors. However, a grapefruit twist, cinnamon stick, or orchid blossom can be added for visual appeal without affecting the taste.

Cocktail Difficulty Levels

We’ve added a difficulty rating to every cocktail so you’ll know what to expect before you start mixing. It’s not about being “hard” or “easy” in the strict sense—it’s about how much preparation, skill, and hunting for ingredients you’ll need.

  • Beginner – Quick builds or simple shakes with common ingredients you’ll likely already have at home. Perfect for beginners or a casual evening.

  • Intermediate – A bit more technique (stirring, shaking, muddling, layering) and a few extra ingredients. You might need to buy one or two bottles or garnishes you don’t already stock.

  • Advanced – Multiple steps, specialty techniques (infusions, syrups, foams), or rare ingredients. These drinks take more effort and planning, but reward you with something truly impressive.

The rating is based on things like the number of ingredients, how rare they are, and the skills needed to bring the cocktail together.
