Passion Fruit Margarita
The classic Margarita meets tropical passion fruit in a tart, sweet drink with a fresh kick of lime.

Ingredients
- Blanco tequila, blanco, or reposado for a softer finish60 ml
- Orange liqueur, triple sec, Cointreau or Grand Marnier30 ml
- Lime juice, freshly squeezed30 ml
- Passion fruit juice, unsweetened purée, ideally, for the most intense flavour22 ml
- Agave syrup, adjust to taste15 ml
- Salt, for the rim (optional)1 pinch
- Lime, to garnish (optional)1 wheel
- Passion fruit, the seeds, to garnish (optional)1 piece
Method
- Moisten the rim of the glass with a lime wedge and dip it in salt or sugar, as you prefer.
- Put the tequila, orange liqueur, lime juice, passion fruit juice and agave syrup in a shaker with plenty of ice.
- Shake hard for 15–20 seconds, until the shaker is frosty on the outside.
- Strain into the glass over fresh ice.
- Garnish with a lime wheel and, if you like, a few passion fruit seeds.
About this drink
The Margarita has its roots in 1930s Mexico and is one of the world's best-loved cocktails, a simple, elegant balance of tequila, orange liqueur and lime. The passion fruit version is a newer addition that uses the fruit's intense, tart and perfumed juice to lay a tropical, almost exotic layer over the classic sweet-sour structure. It is perfect for hot days, when citrus and passion fruit together make for something refreshing and sunny.
