Instructions

Add gin, fresh lemon juice, simple syrup, and egg white (if using) to a cocktail shaker without ice. Perform a dry shake for 15 seconds to emulsify the egg white and create initial foam.

Double strain the mixture through a fine mesh strainer into a chilled Collins glass without ice, creating a clean, smooth base for the cocktail.

  • Always use freshly squeezed lemon juice rather than bottled for the brightest, most vibrant flavor and proper acidity balance in your Gin Fizz.

  • The dry shake technique is crucial when using egg white - shake without ice first to properly emulsify the egg white, then add ice for the wet shake to chill and further develop the foam.

  • Never shake the sparkling water with the other ingredients as this will flatten the carbonation; always add it last by gently pouring to preserve the essential fizz that gives the drink its name.

  • Chill your Collins glass in the freezer for 10-15 minutes before serving to help maintain the drink's temperature and enhance the refreshing quality of the cocktail.

The egg white is optional but highly recommended as it creates the signature silky foam and luxurious texture. Fresh eggs from reputable sources are generally safe for healthy adults, but pregnant women, young children, and immunocompromised individuals should avoid raw eggs. You can substitute with aquafaba (chickpea liquid) for a vegan alternative.

While both cocktails use gin, lemon juice, and sparkling water, a Tom Collins is typically served over ice and uses Old Tom gin traditionally, while a Gin Fizz is served neat (without ice in the glass) and often includes egg white for foam. The Gin Fizz is also generally more concentrated in flavor.
